Water in Motion
To craft our Hydro-Collection, we use water in motion to extract tannin from French oak. Our coopers developed a custom water tank and exclusive process to create barrels defined by elegance and finesse.
Water is always circulating
Accelerated tannin extraction due to the constant agitation. We are maximizing the amount of tannin that can be removed from the barrel at this stage. Circulation also ensures the water temperature is consistent throughout the tank during barrel immersion.
A custom toast immediately follows water immersion
Heat is an important method for destroying tannin. Staves are pre-heated to the core, so the toast will be consistent through the thickness of the stave. This means the toast will penetrate deeper and break down more tannin with this method than traditional fire bending.
